Cave Run is the best in the RRG area, sheltowee has some bad ass riding. Pisgah in NC is really awesome but really not for beginners. Sun Oil land near Zachariah has miles and miles of rocky fire roads, which can be acessed near lady slipper. The list goes on and on.

Be careful on the streets. I have two blinker lights on the back of my bike (one off my saddle bag and another under my seat) in addition to at least one light on the front and I still get ran off the road occasionaly. I also wear a yellow helmet, bright yellow jersey and a orange safety vest (I only wear the vest at night). It also might be a good idea to have a mirror so you can see the cars coming up on you. At least it's less nervewracking.
Sometimes when I work late, I have to ride home in the dark.
Check out the website mentioned about to see what is required on your bike for road usage. You wouldn't get ticketed if you don't have these things, but if you were to get hit, the drivers insurance would be under no obligation to pay for medical bills if, say for instance, you didn't have a bell or horn on your bike or no lights.

Cave Run has great trails, but be careful there if you're new to mtn. biking. A lot of the trails are really torn up by the horses also allowed on the trails. I like it here though because after getting all hot and muddy, ride down to the lake and jump in!
Frankfort Capitol Park (in Frankfort, KY) also has some pretty nice trails, but I wouldn't drive from Cincy to Frankfort for them.
Riding at night... I've got biker shorts with reflective lines in them, and Cat Eye lights in front and back. The back one has 2 settings - one is solid red, the other is flashing. Of course make sure you're wearing a helmet. In the city (Lexington) people seem to make it a sport of swearving toward bikers to get them off the road. It pisses me off so bad, so just always ride as if you're invisible to cars! Most of the time you might as well be!!
