Vegetarian Mexican: Frijoles refritos: Canned or jar of pinto beans,chopped onion sauteed in olive oil, add beans and mash them up, one whole lime squeezed into beans, 1/2 jar of medium to hot salsa, cheese or soy cheese grated, tortillas. the fine people south of the border lived on it for centuries. :|

I can butcher and Hunt . I can poach for that matter. The problem is that they don't allow guns on campus. That whole Texas State University thing. Ever since then they kinda frown on guns on campus. But if you hunt and you want to give your deer away then I'kll take it!!!

They seriously frown on anything that can be used as a weapon. I've got a machete thatI keep in my camping gear that I know they would raise hell over if they saw it.
A bow, Forget it. It would cost my whole budget for twoyears to get a bow.

Yo JH if you want to lose weight and still have energy to climb and play try the low carb, high protein, high soluble fiber gig...works for me. I've lost 12 pounds since july on that diet. But you also got to workout more during the week.

I eat lots of chicken, fish, and beef, and tons of veggies. Go to a health food store and look for gluten bread, low carb bread. Stay away from sugar, regular breads, rice, and pasta and the weight will come off easy. Look for foods with high soluble fiber and if you have the cash buy a soluble fiber suppliment and do the reseach on it...it works.

Lastly eat your carbs (you do need some) for breakfast and lunch not at dinner. Decrease your carb intake as the day goes on.

Do you like spinach quesadillas? Bag of tortillas = $1.50; Box spinach = $.50 - $.75; Bag of onions = $3.00. One quesadilla will cost you about $1.00. These are tasty:

Tortilla
1 Box chopped spinach (microwave, drain, mix with 3 tbls parmesean and a little salt)
One onion (sliced and microwave on plate partially covered with Saran Wrap)
Cheese (your choice. I like munster cheese with this)

Cook the spinach and mix with Parmesean. Set aside.
Cook onion. Set aside.
Put some cheese on a tortilla and microwave for 30-60 seconds. Layer with spinach and onion. Toast in a pre-heated skillet for a minute on each side to get crispy.

Also, look into casseroles. You can make a casserole with egg noodles and canned soup with veggies, cream of chicken, etc, that'll last you a few days. Throw in a bag of frozen veggies and/or a can of beans to make it heartier. I'd stay away from Ramen. They look cheap but it's actually cheaper to buy a bag of pasta instead. Dollar General has a ton of food options.

This recipe for Mexian Lasagna is awesome and is usually done with shredded chicken on every layer but will taste good without it. Maybe even layer with corn but it doesn't need it.

1 can cream of mushroom
1 can cream of chicken
1 jar of salsa
(Mix all above together in bowl)
Cooked shredded/cut Chicken
bag of shredded cheddar cheese
Bag of tortillas

In large casserole dish, layer: tortillas, sauce, chicken, then cheese. Add as many layers as possible (three is usually max) ending with a tortilla layer. Cook at 400 for 30-40 minutes until bubbly

Something else really good and easy to change up are rice dishes. Just cook some rice and 3/4 the way into the cooking time just throw in some chopped onion, corn, veggies of any kind really, cover and flavor with S&P (butter too if you choose...or soy, sugar, hot pepper, etc, for an Asian flare). Or make some rice but instead of using water use chicken stock (buy bouillon cubes to mix with water instead of in a can to save money).

To make rice perfect every time:
One part rice (1 cup) to 2 part water (2 cups). Cover and bring to a boil. When it boils, turn to low (very low), cover, and cook 20 minutes *without* stirring. If you add veggies 3/4 through process, stir sparingly.
