homemade climbing energy

I brought my banana bread to the crag recently, and it was a big hit (surprisingly). A couple of people asked for the recipe, so I'm posting it here. It's really simple and good for you. If you have any recipes for food that is easy to make and travels well in a pack, post 'em up.

WHOLE WHEAT BANANA BREAD

1 C. mashed very ripe bananas (3 medium)
1/3 C. oil or melted butter
1/2 C. honey or brown sugar
2 eggs, beaten
1 3/4 C. whole wheat flour
1/2 t. salt
1 t. baking soda
1/4 C. hot water
1/2 C. chopped walnuts

Beat oil and honey together. Add eggs, mix well. Stir in bananas. Add sifted dry ingredients alternately with hot water; mix until smooth.
Bake in greased 9 x 5 x 3" loaf pan at 325 degrees for 55 to 60 minutes. Cool on wire rack for 1/2 hour before slicing. Freezes well.

Protein: 52.5 grams; Calories 2733

Thanks Sandy, I have been wanting a good recipe for that! Can't wait to try it. Not this weekend though. I am havinf bad baking Karma! Not sure why :roll:
