i might suggest some fresh fruit, particularly bananas. they don't hold up well in camping situations. chilled citrus? i've seen naners go for nearly a buck a piece, crazy. good luck.

This isn't really a snack, and I'm not sure if this is out of the norm, but if you could put a hyperbaric chamber up there that would be awesome.
Any highly perishable superfood drink would also be cool.

I agree with piggy. Heck, you could probably sell most climbers ground up Chinese wallboard in a paper sack if you write some catchy phrase on it with a sharpie. Something like "Now with more entitlement".

nah, its the same stuff you can buy anywhere unrefridgereated. its a can of tuna, packet of mayo and relish, crackers, and a mint.
