Artsay – here’s a favorite recipe of mine –
Millet and rice w/ spicy peanut sauce – (this sauce is great, and millet has the most complete protein of all of the grains!) – I can't remember where the recipe came from, but I've tweaked it over time to suit my tastes...
1 c brown rice, 1 c millet, 1 tsp sea salt – combine the grains, wash them and drain them – toast in a heavy skillet/pan for about 10 minutes, they become really fragrant and start to brown. Add 3 ½ cups of water and the salt, boil, reduce heat and simmer (covered) until the rice is done
The sauce:
1 tbsp dark sesame oil, 1 small onion diced, 1 tbsp (or more) garlic, minced, 1 ½ tsp hot pepper (more or less to taste), ¼ c soy sauce – I use low salt, 1 tsp+ cumin, 1 tsp Chinese 5 spice powder, 1 c smooth natural peanut butter (or make your own by just blending/grinding whatever nuts you like – I like almonds and cashews) – 3 tbsp real maple syrup, 2 tbsp fresh lemon/lime juice, cilantro chopped. (these measurements are not precise, just a guess...)
Sauté the onion and garlic in the oil. Add the spices, and soy sauce, cook for about 2 minutes then remove from the heat. Combine the peanut butter, maple syrup, lemon juice and 1 c. of warm water – mix, mix, mix – add in the onion and spice mix and heap it on the grains. Garnish with cilantro.
You could easily add blackened chicken, tofu, etc. to this. Usually, I just add whatever fresh veggies I have, since the millet provides good protein.
It is a bit time consuming the first time because you’re looking at the recipe, etc. but after that it is simple, and you can tweak it to your taste.

broccoli
onion
kimchi (SE asian, spicy rotted cabbage...sounds gross but is really good)
S&P
put a little oil in the skillet, slice up the tofu and put in first, brown the first side flip, add all the other veggies sliced up on top top it all with a good amount of kimchi (thanks meadows for the right name!) cover and cook until the veggies are done.
great over rice!

I do...my wife is a phenomenol cook (as it sounds like you folks are), but I always bitch because the delagated rules at our home mandate that I do the freakin dishes. Let me tell you, there are 10 times as many dishes when the wifey cooks, versus my bachelor days of microwavin the paper plates....I love the food, I hate the work.

betty crocker indeed. we're all sitting at home, barefoot, waiting for oprah to come on, wearing our aprons and thinking about what we're going to pull out of the oven next. you're just jealous cuz we have these tasty recipes stored away in our heads...
meadows - i LOVE those yummy filled pastas. I miss Trader Joes, will you bring me some this weekend?
virginia, i've had that weird cabbage stuff...not sure i'm ready to cook with it just yet. i'm still trying to figure out what to do when a recipe calls for thai fish sauce...
piggie (even though i don't know you, can i call you piggie, all the other ladies do...) - doin' the dishes can be viewed as good therapy for those calloused climber hands. or, if it is tough on your hands, we'll all pitch in and get you a pair of those nice yellow rubber gloves to wear.

pete, i don't think there is any fish in thai fish sauce. i think it is more like that cocktail-crap for shrimp but spicier. just don't break a jar on your kitchen floor. you'll be living with the smell for weeks!
oh, and i'm jumping in my shoes to try your brown rice/millet! yum!
oh, here's another recipie that ain't so healthy but is dang tasty!
sauce: one can coconut milk and a little can of the green curry
add: chicken sliced and onions. simmer for a while till all is good.
serve: over rice
