Here's a interisting one, but very good if you like garlic.
Step One
Gather 7 or more cloves of garlic, peel them, and cut them lengthwise into three equal size pieces.
Get some good olives and cut them in half, lenghtwise.
Get some raisins and chop the hell out of them.
Put a decent amount (enough to make a shallow puddle, not a pool) of olive oil in a skillet and heat on medium. Toss in the garlic, cook till soft.
Reduce heat, throw in the raisins and olive, watch out, it makes alot of spatter!
Keep cooking till the edges of the garlic are slightly brown.
Throw it on pasta, or rice if your hard up for cash.

Lynne - I love to cook and have a ton of great recipes although I ususally just wing it. I seem to cook more unusual dishes...Satay Chicken, Jerked Chicken, Pad Thai, Indian. If you have anything in particular you want I'd be more than happy to hook you up with a great recipe.

Terriyaki Sauce
2:1 ratio:
2 part soy
2 part sake
1 part water
1 part sugar
*I usually use ¼ cup : ½ cup.
Heat everything in sauce pan under high heat. When it begins to boil, turn down to low/medium. In cup, mix some of liquid (about ¼ cup) with a tablespoon of cornstarch and dissolve completely. Remix with sauce to thicken adding slowly only enough to thicken it to your liking. If it doesn't thicken enough, make more cornstarch and sauce mixture and repeat. Keep stirring over heat until it thickens completely.

Artsay, thanks! So, um, what do you put it on? (Yeah I'm that pathetic in the kitchen.. my ex was the chef.) Any meat recipes would be much appreciated. I have a hard time getting enough protein and I'm getting bored with baked chicken and grilled steak.
Wait, I'm not bored with grilled steak - that's about as simple and good as it gets! But maybe some interesting chicken dishes would be good. Keep in mind the operative word is simple.

I don't do beef, but i dig chicken.
My favorite simple (from a can) dinner is:
marinate chicken in some hot salsa.. throw in a skillet (or on the Foreman!!)
cook up some black beans, refried beans, corn, and rice. Open a can of some salsa verde, heat up some tortillas, mix up some guacamole, grate some cheddar, and have a burrito smorgasboard!

Buffalo Chicken Pizza
The flavors of the wing appetizer make a great pizza.
Serves 3-4
1 Pizza crust (12")
½ pound Chicken tenders, grilled (I prefer fried)
4 Tablespoons Butter, melted
¼ cup Hot sauce
1/3 cup Ranch dressing
2 cups Mozzarella, grated
Preheat the oven to 400. Dice the cooked chicken. Melt the butter, add the hot sauce and toss with the chicken. Spread the ranch dressing on the pizza crust. Top with the chicken. Sprinkle on the cheese and bake for 10-12 minutes (or until the cheese is lightly browned

Serves 4. If you prefer, mozzarella cheese is a great substitute for
the Parmesan; bake until the cheese is melted.
4 boneless, skinless chicken breast halves
2 14-1/2 oz cans Italian-style stewed tomatoes
2 tbsp cornstarch
1/2 tsp oregano
1/4 tsp hot pepper sauce
1/4 cup grated Parmesan cheese
Preheat oven to 425 degrees F. Place chicken in a baking dish. Cover;
bake 15 minutes.
Combine tomatoes, cornstarch, oregano, and pepper sauce in a saucepan.
Cook, stirring occasionally, until thick. Pour sauce over chicken; top
with Parmesan cheese. Bake 5 minutes, uncovered. Garnish with parsley.
Per serving: 189 calories, 3 g fat, 55 mg cholesterol, 17 g
carbohydrates, 2 g fiber, 24 g protein, 680 mg sodium.
