It is on Limestone right on campus. Near Pazzos, Two Keys Chipotle. Just go down Euclid take a right on Limestone and it will be a block and a half up on your left.

I went to the farm today and came home with lots of fresh veggies. Anyone have a stuffed bell pepper recipe? What do you stuff them with?

Veggie Stuffed Peppers:

3 medium peppers
: cut in half, remove seeds, cook in boiling, salted water for 5 minutes; drain.

1/4 cup chopped onion: sauteed
1/2 cup cooked baby limas
1 cup fresh cut corn (or drained canned)
1 can tomatoes: diced, well drained

Mix well.

Season pepper shells with salt and pepper; fill with veggie mixture.

Combine 1/2 cup bread crumbs with 1 tablespoon melted butter; sprinkle over stuffed peppers.

Bake at 350 degrees for 30 minutes.

I have mixed some cooked, brown rice in with the veggies.

You rule, dipsi! I just recently told Ray and I want to make stuffed peppers and was looking for a good recipe (and one without beef). You read my mind! :)
Does he have a strange bear claw like appendage protruding from his neck? He kep petting it.

Good job Di! but I'm a meatatarian.Where's the beef? So I guess I could stuff them with chicken fried rice,Might be good.

I've always had them stuffed with pork.

I'm a culinary genius. I boiled them like Di said then stuffed them with taco fillings. No baking. They are tasty.

Yum, Jesse! I used to stuff them with chili. We called them Chili Bells! I'll bet the taco filling was great!

Here's a fun recipe for a get-together: (my grandbuddies love this!)

Hay Stacks

Place everything Mexican you like to eat in individual bowls, e.g., refried beans, taco mix, tomatoes, onions, salsa, rice, whatever. The last two bowls contain heated con caso (I think I spelled that wrong) and crushed Doritos and/or Fritos.

Everyone goes along and piles up his or her plate with their favorites. Lastly you pour on the cheese and sprinkle on the crushed chips. Yummy! Hay stacks! Ole!
