So our main meal around here is bean burritos with cheese and Tapatia hot sauce...makes my mouth water!!! Before that it was "Ranch style"beans with Jalapanos and cheese on a bed of rice again with the Tapatia. When it really gets poor then its Rice with Tapatia. Really, really poor is Tapatia in shot glasses!

Cuscous is good and cheap.
Any kind of dried beans/peas are good (if you know how to cook) and cheap.
Buy frozen meat and pack it in a packed cooler that is NOT TO BE OPENED and it will stay frozen for over a week.
Fresh veggies will keep for a while in a cooler and are fabulous when cooked over a fire with some olive oil.
Learn to build a wood (or charcoal) fired oven out of rocks and dirt to bake bread, pizzas, and casseroles.
Learn how to make good stew on a camp stove.
Think about getting a solar oven for your campsites (if you'll be around all day to cook).
I've done some bicycle touring and burned way over 2000 calories a day. M&M's helped a lot with that but so did bread, butter, sardines, canned tuna, nightly stews, more bread, wine, more butter and more bread, this fabulous condensed sugar milk in a squeeze tube (don't know where to find it in the States but it's all over Europe and is wonderful), more bread, etc. Peanut butter is good.
Just remember you're going to be working hard and burning calories so you need lots of calories coming in. Beer, and lots of it, is your best bet, for sure.
